Ingredients

For 4 people

  • 12 carrots
  • 1 onion
  • 1.5 l vegetable broth
  • 4 breadsticks
  • 1 tablespoon of walnuts
  • 1 tablespoon of pistachios
  • 1 tablespoon of pine nuts
  • 1 pinch of Espelette pepper
  • Salt pepper

Preparation of the recipe

Step 1

Peel and cut the carrots into slices. Cook them in the salted and peppered vegetable broth for 20 minutes.

2nd step

Keep a few slices of carrots for decoration. Mix the others in the broth.

Step 3

Peel, cut the onion into thin strips.

Step 4

Divide the carrot gazpacho between the plates. Add onion slices, walnut kernels, pistachios, pine nuts, and pieces of crumbled breadsticks. Add the Espelette pepper. Serve cold.
